Beetroot, Mint and Apple Slaw

Let's not get into precise quantities here. Grate some beets, grate some apples, chop some mint and put them all in a bowl big enough so they can tumble around each other.


To the bowl add a generous glug of vinegar (red, white, sherry etc) and then about double of olive oil. Throw in some toasted seeds like sesame, pumpkin and sunflower. Season with salt and pepper. Muddle them all together using your hands, get right in there. Taste and adjust the seasoning.


Pile onto your most attractive bowl.


Nice with a bit of crumbled feta on top, alongside a tart or quiche or just eaten straight out of the bowl mopping up the beautifully coloured juices with a bread end or two.
